Falafels are generally known to be made from chickpeas. However, original falafels, from Egypt, are made with fava beans. 

The original name of this dish is ta’amiya. This recipe was initially exported via the port of Alexandria to northern Levant, and eventually spread across the Middle East. 

Falafels can be served on a plate or in a pita sandwich. They are usually accompanied by hummus, tahini, pickled vegetables (like turnips & carrots) & also diced cucumber and tomato salad, red cabbage or fried eggplant to name a few standard sides.
