Mahshi has got to be the favourite food of all Egyptians, both big and small!
The term 'mashi' in arabic means stuffed. A stuffing of rice, seasoned with crushed red tomatoes, onion, parsley, dill, salt, pepper and spices is put into vegetables such as green peppers, eggplant, courgette, tomatoes, grape or cabbage leaves. They're then placed in a pot and topped with chicken broth or beef broth.
Mahshi is usually served with molokhia or linansa asfour soup and fried chicken and beef.
